Low Carb Gourmet Champagne Chicken Salad

Boil chicken breast plain by itself in water
Skinless breast take 20 to 25 minutes to cook
The water needs to be at a simmer not boil when you add chicken
Once done let cool then shred chicken

Let set over night in air tight container
Combine chicken with favorite greens, veggies, and shredded pepper jack cheese
